Recently I was babysitting my little cousin & I needed quick, kid friendly lunch option that was fast to make, easy, and healthy. These chickpea nuggets are just the solution to your kiddo lunchtime needs. They require just 10 ingredients and come together in a matter of minutes.
They’re super easy to make so lets make some chickpea nuggets!
First we want to pulse our oats into a flour.
Next we add our chickpeas to the food processor and pulse until crumbly.
In a small bowl whisk together your reserved chickpea liquid until frothy.
Add your seasonings, oat flour, and garbanzo liquid to the chickpeas. Pulse until a dough has formed.
Form tiny scoops of dough into nugget shapes
Dip each nugget into the beaten egg mixture. **check the recipe notes for the vegan egg substitute**
Then dip each nugget into the panko bread crumbs.
Bake for 20-25 minutes until golden brown.
Serve with your favorite dipping sauces. (I LOVE BBQ sauce, Ketchup, and Honey Mustard with these chickpea nuggets.)
These nuggets are toddler, puppy, and boyfriend approved. (The kid LOVES to feed the dog whatever he eats *face palm*) I’m 100% sure that your family is going to LOVE these delicious chickpea nuggets as much as we did.

These bad boys truly reminded me of the McNuggets I would BEG my mom to get me as a child (but better – with NO shady ingredients.) Healthy oil free chickpea nuggets. A delicious vegetarian alternative to chicken nuggets, and the perfect kid friendly lunch!
- 1 15 ounce can chickpeas also known as garbanzo beans
- 1/3 cup chickpea liquid reserved from can
- 1/2 cup rolled oats
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp black pepper
- 1/2 tsp kosher salt
- 1/2 cup panko bread crumbs
- 1/4 tsp paprika
- 1 egg beaten **see notes for vegan sub**
Pre-heat your oven to 375 degrees F.
In a food processor add your rolled oats and pulse until its a flour. Remove from the food processor and set aside.
Drain your chickpeas reserving 1/3 cup of liquid. Add the liquid to a small bowl and whisk until foamy. Add the chickpeas to a food processor and pulse until crumbly, add in the chickpea liquid, onion and garlic powder, salt and pepper, and the oat flour. Pulse until a dough forms.
Shape a small scoop of dough into nuggets, once all the dough is formed dip each nugget into the beaten egg and then into the panko/paprika mixture.
Once each nugget is coated in panko bake for 20-25 minutes or until golden brown (flipping halfway). Serve warm with your favorite dipping sauces.
